"A Smoothie Recipe from Busy Lady" by Elena Goodrow
It is currently 10pm and I am in the middle of a 55 hour work week. I recognize the great privilege I have as a chronically ill person that is able to work full time. Although sometimes I do ask myself if I really can handle it? The answer? With enough rest, staying on top of treatments, and enjoying the small moments, I absolutely can. Only every once and while though. It doesn’t help that I hosted a music festival this week too.
This is a rare occurrence.
Here I am trying not to dose off and fall face first into my laptop, so I come to you with something simple. Let’s talk about breakfast.
Ever since starting Trikafta 6 years ago, my relationship with food has become more complicated than I ever could have imagined. I’ve always had a hard time with breakfast. I don’t feel hungry in the mornings but if I don’t eat enough I crash later in the day. But when I eat food too early I feel ill, so the solution? Smoothies! I have discovered that smoothies are the perfect way to get the nutrition I need in the morning without making myself feel ill. Plus I can drink it while I drive to work, because this busy girl loves multitasking. In case there are other smoothie lovers out there, I will share my go-to smoothie recipe with you. Enjoy!
1/2 cup of frozen fruit (my favorite is the tropical mix with strawberries, mangos, peaches, and pineapple)
1/2 cup of plain greek yogurt
1/2 cup of orange juice
2 scoops of orgain vanilla protein powder (free from my Zenpep program😉)
2 scoops of matcha powder
2 tbsp of chia seeds
a handful of spinach
Blend until smooth and creamy!
